Spicy Chicken Stir-Fry

So Stir-fry is Stir-fry, right? Nothing exciting here...or is it!?
Last weekend the fiance and I made a chicken stir-fry that was spiced to perfection. SO of course I must share.

But first a side-note: We were both vegetarians for a long time and recently began eating chicken and fish again. And boy is it yummy. But we still like to do so sparingly and consciously. We often buy organic and in the case of chicken we are able to find local free range at times. If this sounds silly to care about such matters and you wonder why you should pay a couple extra bucks for such food...we just saw a really good film everyone should see.

Okay anyways...

Ingredients:
1/2 tsp ground turmeric
1/2 tsp ground ginger
pinch kosher salt and course ground black pepper
2 tsp ground cumin
1 tbsp ground coriander
1 tbsp powder sugar
1 lb organic chicken breast

Your choice of at least 4 different veggies. We used:
1 red pepper sliced
1 green pepper sliced
1 zucchini sliced
handful of snow peas
1 onion sliced

squirt of lime juice and honey

1. Mix spices and sugar in bowl.
2. Cut chicken into equal sized strips
3. Coat chicken with spices
4. Heat some oil in pan or wok
5. Cook chicken in pan
6. Remove chicken from pan and cook veggies. Add a little splash of water so spices coat veggies too.
7. Return chicken to pan once veggies are 90% done. Cook for a few more minutes then remove from heat.
6. Add lime juice and honey into pan and stir.

Grab your chopsticks and enjoy!

Love, Jean
